Menu Plan Monday - June 18


I came across another awesome blog this past week - I'm An Organizing Junkie! Among other things, Laura hosts Menu Plan Monday. Since I've decided to start cooking more, I think I'll join in and start posting my weekly menu, with links to recipes when possible. Maybe it will help me to stick with the cooking thing. Who knows? I may turn into a regular Suzie Homemaker yet.

We had company this weekend, and I actually cooked. A lot. So we'll be finishing off leftovers this week before I do any more cooking. No sense in filling the fridge with leftovers and not using them.

Monday - leftover Chicken and Rice Casserole

Tuesday - leftovers from Asahi Japanese Steakhouse, with additional rice if necessary

Wednesday - spaghetti

Thursday - leftover crockpot BBQ Chicken and corn on the cob (page 119 in the Busy People's Slow Cooker Cookbook) with the rest of the potatoes au gratin from Omaha Steaks

Friday - enchiladas (secret family recipe, sorry)

Saturday - leftover spaghetti / leftover enchiladas (takes care of lunch and supper, too)

I think Hubby will be taking the leftover crockpot lasagna (also from the Busy People's Slow Cooker Cookbook) to work for lunches for the next couple of days.

I've never heard of that slow cooker cookbook. I'll definitely have to check it out.
