Menu Plan Monday - June 25


Monday - Garlic Parmesan Chicken with potatoes au gratin

Garlic Parmesan Chicken Breasts
6 Skinless, Boneless Chicken
Breasts
1/2 - 3/4 C. Grated Parmesan Cheese
.7 Oz. Envelope Dry Italian Salad Dressing Mix
1/4 t. Pepper
1/2 t. Garlic Powder
1 Egg, Slightly Mixed
Preheat oven to 400 degrees. Combine cheese, salad
dressing mix, pepper, and garlic powder. Dip chicken in egg, then coat with
cheese mix. Place in shallow baking dish. Bake for 25 minutes, or until juices
run clear when you pierce one breast.


I don't remember which blog I found this recipe on, but I do know I saved it to a word document on my computer when I came across it because it looked good and easy.

We'll be visiting family this weekend, so I'll have Friday-Sunday off from kitchen duty - yay!

Notes from last week's menu:

I took the easy way out Friday night and fixed pizza rolls for supper instead of enchiladas. Yes, all we had for supper that night was a bag of frozen pizza rolls. I'm horrible. Hubby was tired of leftovers by Saturday afternoon (actually much earlier than that, but he was nice enough to not say anything until Saturday afternoon), so we ordered P'zones from Pizza Hut for supper Saturday night/lunch Sunday. Sunday night we finished off the leftover spaghetti.
